Quick Eats – Mango Salsa and Strawberries on a Cloud

Every high school student knows that the key to staying sane through classes, clubs, sports, jobs, volunteering, and life in general is a happy stomach. But when life gets hectic, which happens all too often, who has time for food?

In this new addition to the site, we hope to show you that it is possible to have it all without having to function on empty by introducing you to quick, easy to make snacks that won’t break the bank either.

Strawberries on a Cloud

Craving chocolate covered strawberries but have no time to make them? Try this instead:

Ingredients:
Strawberries
Chocolate syrup
Whipped cream

The How-To:
1. Wash the desired amount of strawberries thoroughly
2. Cut each strawberry in half and place in a bowl
3. Put a ½ cup of whipped cream into a different bowl
4. Drizzle chocolate syrup over the whipped cream (use more syrup for a chocolatier taste; use less syrup for a lighter mixture)
5. Stir the syrup and whipped cream together thoroughly until the syrup and the whipped cream have mixed together
6. Stick the strawberry halves in the whipped cream/syrup mixture and enjoy!

(Note: any other fruit may be used as well depending on your taste)

Mango Salsa
Tired of the same old store-bought salsa? Put a twist on it and make this instead! It’s better for you because it’s fresher and has no preservatives.

Ingredients:
One whole, half-ripe mango
½ of a sweet onion
¼ bunch of cilantro
One tomato
3 table spoons of lemon juice
One cup of cooked black beans
One cup of cooked and drained corn kernels
One deseeded jalepeno (optional)
2 tablespoons of garlic powder
One teaspoon of taco seasoning
Salt (to taste)

The How-To:

1. Wash the raw ingredients
2. Peel the mango and dice up into small cubes and place in a big bowl
3. Dice up the tomato, onion, and jalepeno into small cubes that are the same size as the mangos and place in the bowl
4. Add the corn to the bowl
5. Wash and drain the canned black beans and add to the bowl
6. Finely chop the cilantro and add to the bowl
7. Add the taco seasoning, garlic powder, lemon juice, and salt to the bowl (Be careful with the salt as taco seasoning is already salty)
8. Let sit for 5-10 minutes and enjoy!

Making this ahead of time and storing it in the fridge keeps the salsa cold and fresh. Not only that, but storing some in the fridge ensures that you have some ready whenever you have a salsa calling.
